Description: Haven't tried it yet but doesn't it look good? Nancy says it's delicious!
Ingredients: Cake layer: 1 cup flour 1/2 cup softened butter 1 16 ounce can Hershey chocolate syrup 1 cup sugar 4 eggs
Mint layer: 2 cups powdered sugar 1 tablespoon water green food coloring 1/2 cup softened butter 1/2 tsp mint extract
Chocolate topping: 6 tablespoons butter 1 or more cups mint chocolate chips (or semi-sweet with added mint extract)
Directions: Preheat oven to 350. Grease a 9x13 pan. Mix all cake ingredients and pour into pan. Bake for 20-30 minutes. Cake will look wet. Cool completely.
Beat Mint Layer ingredients together and layer on cool cake. Chill.
Melt Chocolate Topping ingredents in microwave for 1 or 2 minutes, stirring frequently until melted. Spread over mint layer and chill

Description: This is a really tasty casserole and easy to make.
Ingredients: 1 pound yellow squash (about 4 small) chopped into small pieces 1 whole onion, chopped 3 Tbsn butter or margarine 2 whole eggs, beaten 1 cup cheddar cheese, shredded 1 tsp salt 1 cup milk 1 cup cracker crumbs (saltine or ritz) dash pepper
Directions: Preheat oven to 375 Grease casserole dish (9x9 or 9x13, I don't remember) Combine squash, onion, butter in skillet. saute until tender Coarsely mash with fork. (Don't get obsessed over this.) Add remaining ingredients (yes the cracker crumbs go right in) Put in casserole dish. Bake at 375 until knife inserted near center comes out clean. 30 minutes or so.
note: I used skim milk and 4 egg whites (rather than 2 eggs) to cut down in fat, but I'm sure it was a lost cause with all the cheese.
